Ingredients

Fresh ingredients make better food. It's also true that bakers can get away with using long-stored ingredients in a way that chefs can't. But we don't. 'Unspoiled' isn't the same as ‘fresh.' That's why we grind our own spices as needed for every order, mill our own flour, and use local eggs. You can taste the difference.

 
 

Zero-Waste, Plastic-Free

The best of our ecological best practices - Scott's produces no garbage in the course of its operation. By avoiding disposables like paper towels, parchment paper, foil, trash bags, and single-use gloves, we limit the extent of what we discard to things that can be recycled, composted, or taken to a salvage facility. The one exception is plastic bags and films, which we do not use, but in which some of our ingredients come packaged - all of this material we wash, compress, and store elsewhere in the hope of finding a good way to dispose of it one day.

Avoiding waste goes hand-in-hand with our general avoidance of plastic. During the time that they're in our hands, our ingredients and products have no exposure to plastic at all. All of our packages are recycled paper, and all of our kitchen equipment is aluminum, glass, wood, stone, cast iron, or stainless steel. The entire kitchen area at Scott’s is plainly visible through a glass wall - come see for yourself.

Organic and Local Ingredients

At its founding in 2016, Scott’s became the first certified organic bakery in Missouri. Initially, this meant using only certified-organic ingredients, which indicates that they are not GMOs; grown without artificial pesticides, herbicides or fertilizers; and that various standards of animal treatment are met, among other things. Today, we also use various local ingredients that meet these criteria, despite not being certified.
